Marshmallow Confetti Cake

The second addition to the 12 Days of Baking series is an all-time family favorite in this house, especially my eldest, Confetti cake squares.  Another peanut recipe, apologies if any of you have a peanut allergy this one won’t be for you BUT there are many more to come that either won’t have nuts or recipes where you could omit the nuts.  This one is easy to make and perfect for freezing ahead.

 

Ingredients

1 (12 oz.) pkg. butterscotch chips
1/4-1/2 c. butter
1 c. peanut butter (smooth or crunchy)
1 pkg. sm. colored marshmallows

 

Directions
Combine butter and peanut butter and butterscotch chips in a saucepan on low  to medium heat until melted. Take off heat and cool before adding marshmallows. Scoop mixture into ungreased 9X13 pan. Spread out evenly and press down. Refrigerate until cold and cut into squares. Keep in refrigerator or freezer for freshness.

    • It is! My girls love this one. Great to freeze for company just shows up out of the blue too. Let me know what you think after you make it. Enjoy!

  2. i wonder if those with peanut allergies could substitute sunflower seed butter for the peanut butter? it might be something to try!

  3. I LOVE these too much! I make mine with half butterscotch chips and half chocolate chips. I don’t make them very often because they call to me. I guess I should really make and freeze them right away!

    • I haven’t tried with half chocolate chips…good idea! Definitely stick them in the freezer right away, you won’t eat as many. My DD would eat the whole batch if I didn’t put them in the freezer. LOL

  5. Hi I live in New Zealand and im just wondering what are butterscotch chips and since I don’t know what they are is there any thing else I could use instead? ?

  6. What can I substitute that would go well with it instead of butterscotch chips because I hate butterscotch! But these sound so good otherwise! Idk what to use that would go well with marshmallow confetti cake.
