Banana Chocolate Drizzle Cake

I love banana loaf but really wanted something more spectacular to do something with my over ripened bananas.  This Banana Chocolate Drizzle Cake recipe might never allow you to return to regular banana nut loaf again.

Ingredients
  • ½ cup softened butter
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 3 over ripe bananas (medium)
  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ¼ cup cocoa
  • Buttercream icing
  • Chocolate Syrup
Instructions
  1. Cream together butter and sugar in a medium mixing bowl or mixer. Mix in egg and vanilla and beat until combined. Mix in the ripe bananas. In a small bowl combine flour, baking soda, baking powder and salt and slowly add to cream mixture, mixing well.
  2. Spoon half the batter into a small bowl and set aside. Add cocoa to the remaining batter and mix well. In a greased square glass baking dish spread the chocolate batter evenly over the bottom. Spoon the remaining batter over the top of the chocolate batter and spread evely. Bake at 350 degrees F for 30 minutes using the toothpick test to make sure the center is done.
  3. Cool completely before spreading the buttercream icing over the top of the cake. Slice and drizzle chocolate syrup over the top of each piece before serving.
