Ingredients
- 2 lbs ground beef
- 1 chopped yellow onion (medium)
- 1 cup sliced carrots
- 1 chopped green pepper (substitute red pepper optional)
- 1 can kidney beans
- 1 can black beans
- 1 can of mini corn cobs
- 1 large can diced tomatoes
- ¾ the diced tomato can of water
- 1 can tomato soup
- ½ tsp garlic salt
- 1 tsp salt
- ½ tsp pepper
- 2 tsp of chili powder or to taste
- Grated cheddar cheese
- Sour cream
Instructions
- Brown the ground beef and onions together. Drain off the grease.
- Add in the remaining ingredients and mix together well. If the mixture seems too thick, add a little more water but not too much to make it watery.
- Bring to a boil then cover with the lid slightly open and let simmer for 1 hour.
- Stir occasionally to avoid burning the bottom. If you notice the chili has become a little dry, add a little more water about halfway through. Taste the chili at the halfway point to ensure you have the chili temperature to your preference; add a little chili powder at a time to increase the spicy flavour.
- Top each bowl of chili off with a spoon of sour cream and shredded cheddar cheese for added flavor with a side of fresh buttered bun for dipping.
