Adding Chicken to the Lunch Box

My kids are getting excited to start back to school, seeing friends they haven’t seen for the summer and finding out their new teacher is this year is high on their list. I personally think they love having new school supplies and finding out what I packed them for lunch; they actually get giddy about it. For the most part lunches are packed to contain all the recommended food groups in ways my kids will find exciting and full of flavour.

 

Before the week begins, I plan out my grocery list for the upcoming weeks meals and set to cooking ingredients I can extend through the week.  Prepping and cooking ingredients ahead helps avoid processed foods that I don’t want my children consuming on a daily basis. It’s important to me to spend some extra time on their lunches so they eat healthy for the most part but as a busy mom to 5, I don’t want to spend a lot of time cooking. Chicken is a great source of protein that you can cook ahead and use in meals throughout the week, including leftovers for the lunch box.
 

 

I have a few go-to lunch box favourites, such as Chicken Cesar Salad, but this year I’ll be trying out some new recipes from Chicken Farmers of Canada. Any foods that are great for dipping are perfect for kids. The CRISPY CHICKEN & ZUCCHINI CORNMEAL CHEESE FINGERS is a meal I know my kids will love either warm or cold.
