Parmesan Chicken Bites
We’re at day 2 of #HolidayAppetizers week and 1 week away from Christmas Eve, can you believe it? I hope you don’t have too many last minute gifts to buy. In the meantime, spend some time whipping up these Parmesan Chicken Bites; with a side of your favourite dips, these bites will vanish quickly. My family likes these so much that I make a full-size version of these for meals occasionally, just follow the same recipe but up-size it. - 6 chicken breasts
- 1 cup cracker crumbs
- ½ cup Parmesan cheese
- 1 tsp dried thyme
- ½ tsp salt
- garlic salt
- ½ cup melted butter
- Cut chicken into cubes.
- Combine remaining ingredients, except the butter.
- Dip chicken chunks into butter then coat int he crumb mixture.
- Spray baking pan with cooking oil lightly and bake in a single layer at 400 F. for 15 minutes.
These can be frozen in a single layer and cooked later.
