We’re at day 2 of #HolidayAppetizers week and 1 week away from Christmas Eve, can you believe it? I hope you don’t have too many last minute gifts to buy. In the meantime, spend some time whipping up these Parmesan Chicken Bites; with a side of your favourite dips, these bites will vanish quickly. Serves: 24
Ingredients
  • 6 chicken breasts
  • 1 cup cracker crumbs
  • ½ cup Parmesan cheese
  • 1 tsp dried thyme
  • ½ tsp salt
  • garlic salt
  • ½ cup melted butter
Instructions
  1. Cut chicken into cubes.
  2. Combine remaining ingredients, except the butter.
  3. Dip chicken chunks into butter then coat int he crumb mixture.
  4. Spray baking pan with cooking oil lightly and bake in a single layer at 400 F. for 15 minutes.
Notes
Makes 72 bites; servings listed portioned at 2/person.
These can be frozen in a single layer and cooked later.
