The summer is all about feeling the warm sunshine on your face, spending time with family and friends and indulging in some of our favourite backyard barbecue tasty eats. I don’t know about you but when it’s hot and sticky the last thing I want to do is cook up a meal that takes effort. That’s when I head to the store and grab ingredients for recipes that literally take minutes, like this Blooming Onion Chipotle Wedges recipe. It’s easy to make, a great presentation for backyard entertaining and delicious too.

 

Summer Fresh has a great selection of dips and hummus that aren’t just for crackers. Add in a few more ingredients to make an tasty appetizer or party food that literally takes minutes. I chose the McCain® Savoury Wedges as the perfect dippers for this Blooming Onion with a kick of spice.

Cooking time for the wedges aside, this recipe took less than five minutes to put together. Caramelized Onion Topped Hummus, bacon, chives, lemon and of course the heat and cheesiness of Aged Cheddar & Chipotle Dip make this a mouthwatering finger food. If you can’t find the Aged Cheddar & Chipotle Dip at your local grocer, try the regular Summer Fresh Chipotle Dip.

 

My daughter had a taste, without the spicy dip of course, and loved it so much so called me a Champion. She has never called me that before after one of my recipes and not to toot my own horn but this is one delicious blooming onion, if I do say so myself.

 

I’m planning my next patio menu. Roasted Red pepper Hummus and Five Cheese Dip sound delicious; I have a few drool-worthy ideas whirling around in my head. What do you think I should make next?

Blooming Onion Chipotle Wedges

Ingredients

  • 1 package of Savoury Potato Wedges
  • 1 container of Caramelized Onion Hummus
  • 2 tbsp real bacon bits
  • 1 tbsp chopped chives
  • 1/2 of one lemon
  • Aged Cheddar and Chipotle Sauce for dipping

Instructions

  1. Cook potato wedges as mentioned on the package.
  2. Arrange wedges layered in a bowl to appear as a blooming onion, making it easy for finger food.
  3. Squeeze the juice of half a lemon over the blooming wedges arrangement.
  4. In the middle of the wedge bloom scoop the caramelized onion hummus.
  5. Top with bacon bits and chives and serve hot with a side of Aged Cheddar and Chipotle Dip.
