21 Healthy Recipe Ideas 21 Day Fix Approved
Not long ago I was chatting with my sister about how crazy busy life had become and how I have little to no time to take care of my personal needs. Do you know what she said to me? “What I’m hearing are excuses.” That was a bit of a kick in the teeth but after much internal reflection, I knew she was right so I decided to join her on a month of change. During the time I utilized these 18 Healthy Recipe Ideas {21 Day Fix Approved} that anyone can use who are looking for healthier options.
1. Devilled Eggs – Hard-boil two eggs, take the cooked yolk out, mix well with 1 tsp of mustard and 1 tbsp of hummus, fill whites with yolk mixture and sprinkle with paprika.
2. Banana Orange Sunshine Shake
5. Grapes and a hardboiled egg
6. Ricotta cheese with cinnamon, raw honey and raspberries. (not pictured)
7. Roasted turkey breast on 2 whole wheat crackers with cottage cheese and mustard
8. Energy bars
9. Veggie Burger with salsa and lettuce and a side of 1/4 apple slices.
10. Spinach, 2 hardboiled eggs (sliced), grape tomatoes, artichoke hearts and chickpea salad. Use 1 tbsp olive oil and 1 tbsp red wine vinegar for dressing.
11. Hardboiled egg smashed with 1 tsp of mustard, spread 1 tbsp of hummus and/or 1/4 sliced avocado on 12 grain toast.
12. Leftover grilled steak salad with spinach, grape tomatoes, artichokes and balsamic vinegar for dressing.
13. Leftover sliced chicken breast with spinach salad, artichokes, slivered almonds, dill, olive oil and red wine vinegar for dressing.
14. Quinoa stir-fry with vegetables and olive oil, red wine vinegar and Mrs. Dash spice to taste.
15. Stuffed green peppers. Extra lean hamburger, brown rice, tomato paste, spinach and season to taste (no salt).
16. White fish, brown rice, roasted cauliflower with cheddar cheese and creamy cucumbers using greek yogurt, lemon juice and dill.
17. Herb and lemon chicken. Thyme springs, lemon slices, garlic, Mrs. Dash and chicken breast.
18. Roasted turkey breast, roasted brussels sprouts, spinach and blackberry salad with pine nuts and balsamic vinegar from dressing.
19. Roasted potatoes and tofu with asparagus, garlic, olive oil and Mrs. Dash to taste.
20. Baked chicken breast with salsa, mashed sweet potato with 1 tbsp greek yogurt and shaved parmesan, grilled asparagus and 10 olives.
21. Grilled sirloin steak, salad with shaved parmesan and vegetable quinoa.
*This is a list of recipes ideas (with some links to recipes) that are fairly easy to cook, no recipe instructions required. Cook as to what the ingredients require. For example, chicken should be cooked through and potatoes generally take longer to cook than other vegetables. If you are stuck, ask in the comments and I can provide instruction.
I used ingredients that I could crossover between recipes for the 21 days to make it easier and more cheaper for groceries. I roasted a full turkey and several chicken breasts and would then have leftovers for lunch salads the next day. Extend the ingredients to make them go farther.
My favourite meal was the sweet potatoes with salsa chicken and side of asparagus but the meal plans can be adjusted to suit your preferences and tastes.
