A few months ago when I was in the Emerald Coast, Florida at the Ft. Walton Beach Four Points Sheraton I had the best pretzels and beer cheese in the lobby bar. It so happened that the Chef gave me a loose recipe for the beer cheese which I knew I had to make. Although I didn’t grab the pretzel recipe to go along with it, I had one of my own. My cheesy homemade pretzels to go with the beer cheese seemed to be a perfect match.

I haven’t made pretzels in awhile but this basic recipe is quick and easy for a quick fix to a craving. There is no rising time to this one so you can skip the beer cheese (gasp) and pair them with mustard, if you prefer, but if you try the beer cheese, you will be glad you did.

Ingredients
  • 1½ cups of flour
  • ⅔ cups milk
  • ½ cups cheese, shredded
  • 2 tbsp butter
  • 2 tbsp baking powder
  • 1 tsp sugar
  • 1 tsp salt
  • 1 egg
  • Coarse salt (season with onion powder, garlic powder)
Instructions
  1. Preheat oven to 400 degrees F.
  2. Grease baking sheet.
  3. Mix all ingredients, except the last two, form into a soft dough.
  4. Smooth dough into a ball, knead 10 times and add a little extra milk if it's too dry or flour if it's too sticky.
  5. Rol dough out onto a lightly floured surface into a rectangle about 12" x 8". Cut into 1" strips lengthwise.
  6. Fold each strip, rolling it into a long even round strip before twisting into a pretzel shape. Place onto cookie sheet an inch from each other.
  7. Beat the egg and brush onto pretzels and sprinkle lightly with garlic, onion and coarse salt.
  8. Bake for 20-25 minutes.
