Easy Parmesan Chicken with Cherry Tomatoes
I am forever trying to take the hassle and rush out of weeknight dinners. Like most families, once fall and winter hit, we are off and running with extracurricular activities after school. I’m often rushing home to throw something in the oven before we head out to our next event. And even though I want dinner to be speedy and fairly easy during the week, I still want it to taste amazing and be healthy for us. I have teenagers who are towering over me now, so dinner needs to be quick and filling (do they ever stop eating??). Enter this Easy Parmesan Chicken with Cherry Tomatoes. It’s on our regular dinner rotation because it’s dead simple and it tastes really good!
I haven’t quite figured out how to make weeknights go a little more smoothly. We generally round the corner to basketball, two tires on the road and two in the air, having just finished dinner and leaving all of the dishes to be done at home. I’m often pretty envious of those families who look like they have it all together, arriving on time, not seeming to rush at all. I have to definitely prioritize and having a good dinner on the table is really number one for me. It’s sometimes the only time in the week, other than week-ends, that we sit down and catch up with each other. Pretty soon my whole crew will be out of the house, off to grander things and I’m genuinely going to miss these days.
For this meal, I generally use a Classic Herb dressing on top of the chicken breasts before cooking, but using an Italian dressing works just as well too. It’s an easy way to infuse some flavour into the chicken without all the prep work. A sprinkle of parmesan cheese on top just adds another dimension of flavour, along with some juicy cherry tomatoes and basil. All that’s left to do after it’s thrown in the oven is prepare a side salad and maybe put your feet up for a few minutes. A juicy chicken breast, along with a veggie loaded side salad is a pretty perfect and simple meal if you ask me. It gives us the energy we need to power through the rest of the evening sometimes.

- 5 boneless, skinless chicken breasts
- ½ cup Classic Herb Dressing
- ½ cup grated parmesan cheese
- 2 cups cherry tomatoes
- handful of fresh basil
- Preheat oven to 400 degrees
- For easy cleanup, line a 13 x 9 baking dish with parchment paper.
- Lay the chicken breasts in the bottom of the pan.
- Scatter the cherry tomatoes and basil around the chicken.
- Pour the dressing all over the chicken and top with the parmesan cheese.
- Bake for 40 minutes or until chicken is done.
