4 Ingredient Easy Almond Cookies
Sometimes you just crave cookies in a hurry without all of the creaming and add-ins and things. Just a super quick, one bowl job that is really tasty and I dare say a wee bit healthier for you. Enter these 4 Ingredient Easy Almond Cookies, that are loaded with natural almond butter and contain no flour what-so-ever. A batch of a dozen can be made in under 30 minutes and you’ll be a hero!
I love a cookie that is made entirely in one bowl with the added bonus of not having to drag the mixer out. The beauty of the limited ingredients here, is that all you need is a good wooden spoon and a little muscle power (not even that really, they mix very easily). The trick with using nut butters in cookies and recipes, is to be very careful not to over mix. When that happens, the oil starts coming out of the nuts and essentially changes the recipe. Just a mix until fully combined will do for the easy almond cookies!
I like the switch from using peanut butter in cookies to using almond butter. The taste is entirely different, and believe it or not, almond butter has a better nutritional profile than it’s peanut butter buddy. I know, I know, we’re talking cookies here right? But I do like to think that the addition of almond butter might make these just a slightly healthier cookie for my gang. And there’s only 3/4 cup of sugar in the recipe, which for a cookie is pretty alright.
While most times I make a batch and they’re quickly swallowed up by the kiddos, I do like to sneak a few of these easy almond cookies in the freezer (because they freeze really well), for those times that this mom just needs a 5 minute tea break. It’s definitely a family favourite around here and a snack that we often pack for car trips and family outings. These aren’t overly sweet either, but go oh so well with a tall cold glass of milk. I’m completely smitten with the crispy outside and chewy centre.

- ¾ cup brown sugar
- 1 egg
- tsp vanilla
- Preheat oven to 350 degrees.
- In a medium mixing bowl combine the almond butter, sugar, egg and vanilla. Mix with a wooden spoon until thoroughly combined, being careful not to over mix.
