Chicken Sausage Lazy Breakfast Casserole

Ingredients
  • ¼ cup butter
  • 2 lbs frozen hashbrowns
  • 1 medium green pepper, cut into small chunks
  • 1 medium red pepper, cut into small chunks
  • 1 medium white onion, diced
  • 1 package Maple Lodge Farms Smokies Chicken Sausages, sliced into ¼" slices
  • 2 cans cream of mushroom soup
  • 2 cups sour cream
  • 1 tsp salt
  • 2 cups grated cheddar cheese
  • ½ cup corn flakes
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Place the butter into a 9X13" baking dish and place into the oven until melted.
  3. While the butter is melting, mix together hashbrowns, peppers, onion, chicken sausage in a large mixing bowl.
  4. In a medium mixing bowl, mix together mushroom soup, sour cream and salt. Pour over the hashbrown mixture and mix well.
  5. Remove the baking dish from the oven, roll the butter around until the dish is well coated.
  6. Scoop the hashbrown mixture into the buttered baking dish, press down evenly. Spread cheddar cheese over the top and cornflakes on top of the cheese.
  7. Cook covered for 50 minutes, remove cover and continue cooking 10 minutes or until the top is browned. Serve hot.
