Lemon Dill Campfire Asparagus and Green Beans
Camping food can easily become a lot of heavy meals leaving you craving a lighter side. This Campfire Asparagus with greens is a great way to get your veggies in and makes a tasty side dish to grilled meat.
Campfire Asparagus – A Lighter Side Dish
So many campfire meals revolve around potatoes because they are filling and easy to throw together for large or small groups, but they get boring. After a hot day, the last thing you want to be doing is eating a heavy meal and this Campfire Asparagus with Green Beans is a lighter choice and just as delicious.
Campfire Asparagus & Green Beans are steamed over the fire with a buttery blend of salted lemon and dill greens that goes with any grilled meat. Just remove the foil in the last minutes to toss and crisp up the greens before serving.
*During camping season there are often farmers markets where you can purchase fresh fruit and vegetables from or, if you meal plan ahead, pack your own.

Lemon Dill Campfire Asparagus and Green Beans

Ingredients
- 1/2 lb green beans
- 1 lb asparagus
- 1 tbsp butter
- 1/2 tsp dried dill weed
- Juice of 1/2 lemon
- Kosher salt to taste
- Pistachios for garnish (optional)
Instructions
Preheat the campfire for cooking. See the article How to Build a Cooking Fire.
Wash and trim ends, stalk ends for the asparagus. Place into a medium foil pan.
Squeeze juice of 1/2 lemon over greens, sprinkle dill, salt to taste and butter over the top. Pistachios are optional but add a nutty flavour with crunch texture through.
Cover with foil and place over the grate of the cooking fire, shaking the pack to disperse butter and herbs, for approximately 10 minutes or until greens are cooked but not mushy. Continue cooking to crisp up the greens, approximately 5 additional minutes, tossing with tongs.
Serve hot with your favourite grilled main course.
