Grilled Lemon Pepper Campfire Salmon
Camping and fishing almost always go together for us; unfortunately we don’t always have the option of a bountiful lake nearby; I check ahead to confirm and meal plan accordingly. Lemon Pepper Campfire Salmon is a family favourite on seafood night so when fresh fish isn’t available we have a fillet ready to go for an easy camping meal.
Campfire Salmon – Nonstick Made Easy
Fish easily sticks to the grill but when you use a bed of lemon slices it avoids sticking to your grill pan while infusing the fish with lemon flavouring; adding the pepper and salt to penetrate tenderizing the fish for a perfectly flakey and moist meal.
This Campfire Salmon recipe makes enough for six with a side dish or two. For larger groups, pair this recipe with our Campfire Mussels in Creamy Garlic White Wine Sauce and Campfire Shrimp Boil for the ultimate seafood feast enough to feed a hungry group of campers.

Grilled Lemon Pepper Campfire Salmon

Ingredients
- 2.3 lb salmon fillet
- 2 lemons, sliced 1/4"
- 3 tbsp butter
- Kosher Salt to tase
- Pepper to taste
- Parsley for garnish
Instructions
Preheat the campfire for cooking. See the article How to Build a Cooking Fire.
Rinse salmon in cold water and pat dry with paper towels.
On a large foil baking pan lined with slices of lemon, place butter in the middle before placing salmon skin side down on top of the bed of lemons.
Sprinkle salmon with salt and pepper and cover with foil.
Place on grate over the cooking fire and leave untouched for approximately 18 minutes or until the fish flakes easily.
Remove foil, garnish with parsley and serve hot with lemon wedges.
Notes
For every inch of thickness cook salmon up to 10 more minutes.
