Cucumber Watermelon Appetizers with Goat Cheese

Ingredients
- 1 English cucumber
- 24 1" slices of watermelon
- 1/4 cup blueberries
- 1 tbsp olive oil
- 1 tsp honey
- Goat cheese crumbles to garnish
- Parsley to garnish
- Course salt to garnish
Instructions
Slice cucumbers into 1/4" slices and place on a platter; this should cut around 24 slices.
Slice watermelon into 1/4" thick/1" squares and place on top of cucumber slices.
with a hand blender, blend blueberries, oil and honey until puréed, drizzle a small amount over each cucumber/watermelon slice.
Top with goat cheese crumbles, chopped parsley and a small amount of coarse salt over each cucumber/watermelon slice. Serve chilled.
