- 1-pound ground beef
- 3 cups heirloom cherry tomatoes
- 1 small white onion
- 8 ounces dry spaghetti
- 10 sprigs parsley
- 4 cups vegetable broth
- 1 cup Mozzarella
- ½ teaspoon pepper
- ½ teaspoon garlic powder
- ½ teaspoon salt
- Red pepper, optional to taste
Brown ground beef together with onion in Instant Pot inner pot on sauté mode.
Add in the cherry tomatoes, parsley, dry spaghetti and vegetable broth. Press pasta down so it is under the liquid. Add a little extra liquid (water) to cover the pasta if necessary. You can drain excess liquid when the pasta has finished cooking if desired.
Close the instant pot lid and turn pressure valve to seal. Cook on manual high pressure for 6 minutes.
Allow for a quick pressure release (drain liquid if desired) and then add in the remaining ingredients, stirring in the cheese.
