Holiday Entertaining: Stuffed Cheesy Asparagus Chicken Rolls Appetizer
We love to holiday entertain and when we do, we share a lot of appetizers over the holiday season. This recipe is actually one of our main meal recipes we’ve turned into an appetizer version because it has all the right flavours packed into one delicious chicken rolls appetizer.
This chicken rolls appetizer is stuffed with a mix of lemon pepper flavours and cheesy goodness. Top it off rolled in creamy mayo and rolled in crushed cornflakes for crispy baked perfection.
If you would rather make a meal out of this, just skip the steps of cutting into 3’s and use the whole chicken breast. Keep in mind you will need to use more stuffing per chicken breast and will have to cook the chicken for longer because of thickness, approximately 45 minutes.

- Half a bundle of asparagus, approx 3" of heads/stalks
- 3/4 cup grated mozzarella
- 1/4 grated parmesan
- 1 tbsp lemon pepper seasoning
- 4 Chicken Breasts, cut into 3's
- 1 cup crushed corn flakes
- 3 tbsp mayonnaise
- 12 or more toothpicks
Slice thawed chicken breast thirds down the middle being careful not to separate it completely.
Using a meat hammer, open the chicken and tenderize until a flatter rollable consistancy is reached.
Mix mozzarella and parmesan cheese together and set aside.
Spinkle lemon pepper over the open chicken.
On one side of the open tenderized chicken, place 3-4 asparagus and about a tablespoon of mixed cheese on top. Roll chicken tightly over the stuffing until completely rolled, secure with toothpicks(s).
Brush each roll with mayonnaise and roll in crushed cornflakes.
Place on a baking sheet lined with parchment paper.
Cook at 400ºF. for 35 minutes or until golden browned and chicken is cooked through.
This can be made with whole chicken breasts as meal sized portions vs. an appetizer.
