Sweet Potato Zucchini Quiche Nest

Ingredients
  • 2 - 9" pie crusts
  • 2½ cups shredded sweet potato
  • 2 cups shredded zucchini
  • ½ cup red onion, diced
  • 2 garlic cloves, minced
  • 2 cups shredded cheddar cheese
  • 10 eggs
  • 1 tsp oregano, dried
  • ¼ cup fresh parsley
  • 1 tsp salt
  • ¼ tsp pepper
  • 2 tbsp shaved parmesan cheese
  • 6 egg yolks (optional)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Place shredded sweet potato inside the pie crusts evenly around the outside edge, fluffing it to make it look more like a nest.
  3. Place the shredded zucchini in the middle of each pie crust, in the same method as the potato.
  4. Sprinkle minced garlic and dice onion evenly over the top of both quiches.
  5. In a medium bowl, beat the 10 eggs until frothy. Take a spoon full from the bowl into a small dipping bowl, add 1 tsp of cold water and using a basting brush, brush the water/egg mixture onto the outer lip/edge of the crust. In the remaining beaten eggs, add oregano, salt, pepper, parsley and shredded cheese and mix again with a spoon. Spread mixture evenly over the tops of both quiches.
  6. Bake both quiches on the bottom rack of the oven for 40 minutes.
  7. Remove from the oven to cool slightly before placing 3 egg yolks on the centre of each quiche, sprinkle shaved parmesan cheese around the outer edges of the yolks and place back in the oven for another 10 minutes.
  8. Sprinkle the top of both quiches lightly with shaved parmesan cheese before serving. Serve warm.
  9. This recipe can be cut in half to make a single quiche.
