Rhubarb Sugar Cake

Ingredients
  • ½ cup butter
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup milk
  • 1 tbsp vinegar
  • ½ tsp salt
  • 2 cups flour
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • 2½ cups finely chopped rhubarb
  • Topping...
  • ⅓ cup brown sugar
  • ½ tsp cinnamon
  • ½ cup coconut (optional)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Cream butter and sugar, add egg and mix well.
  3. Add vinegar to milk and stir; add to the creamed mixture.
  4. Add in the remaining ingredients and mix well.
  5. Pour into a greased 9" x13" pan.
  6. Mix the topping ingredients and sprinkle evenly over the cake batter.
  7. Bake for 50 minutes or until browned and a toothpick inserted into the centre comes out clean.
