Chewy Amaretti Holiday Cookies

  • 2 cups Almond Flour
  • 1½ cups icing/confectioner's sugar
  • 1 tsp almond extract
  • 2 eggs whites/ 4 tbsp liquid egg whites
  • White granulated sugar (coloured with desired colour)
  • ¼ cup white melting chocolate wafers
  1. Preheat the oven to 325 degrees F.
  2. Line a baking sheet with parchment paper and set aside.
  3. Mix the first 4 ingredients together using a fork until completely mixed.
  4. Roll 1 tbsp of cookie dough into a round shape, roll in coloured sugar and place on the parchment paper about 1" apart.
  5. Cook at 325 F. for 25 minutes or until slightly browned and the tops crack.
  6. Cool completely.
  7. In a glass bowl, melt chocolate wafers in 30 second intervals until melted, stirring between to ensure you do not burn the chocolate. You can add a small bit of lard, if you need to make the chocolate a bit more runny.
  8. Spoon chocolate into a ziplock bag, cut off a small bit of the corner and drizzle over the cookies. Let dry completely before eating or packaging.
