Chicken Bacon Ranch Bites

  • 2 cans Pilsbury Large/Grand Croissant Pastry
  • 6 slices thick bacon
  • 2 boneless/skinless chicken breasts
  • 1 8oz block of cream cheese
  • 3 cups shredded mozzarella
  • 1 package ranch dressing seasoning (powder not liquid)
  • Ranch dressing (optional)
  • Hot Sauce (optional)
  • Parsley for garnish (optional)
  1. In a medium skillet, cook chicken breasts until cooked through. Let cool completely and chop into small pieces.
  2. In a medium skillet, cook the bacon slices until almost crispy, drain and pat the grease dry with a paper towel. let cool completely.
  3. In a large bowl, mix cooked chicken and bacon, cream cheese, mozzarella and ranch and mix thoroughly.
  4. Cut each half of the pastry into 8 triangles, total of 16 per can.
  5. Fill a pastry triangle with approximately 1 tbsp of the chicken filling mix, folding the dough over and under to seal the appetizer bite, place on a baking sheets lined with parchment paper 1" apart. Repeat until all 16 from each can (total of 32) are done.
  6. Bake in a preheated oven at 400 degrees F. for 10-13 minutes or until golden brown.
  7. Serve warm with buffalo ranch dipping sauce (optional) - ranch dressing with a few drops of hot sauce to taste.
