Cranberry Pecan Hasselback Sweet Potato Bake

  • 4 small to medium sweet potatoes
  • ½ cup cranberries
  • ¼ cup chopped pecans
  • ½ cup brown sugar
  • ¼ cup melted butter
  1. Preheat oven to 400 degrees F.
  2. Wash and slice sweet potatoes into ¼" thick slices and place in rows to fill a 8"X11" baking dish.
  3. Sprinkle brown sugar over the top, then pecans and cranberries.
  4. Pour melted butter evenly over the top and place in oven to bake for 40 minutes, or until a fork can easily go into the potatoes.
  5. Serve warm.
