Blueberry Kasha and Honey Granola

A very easy recipe for granola that includes kasha, wild blueberry honey and dried blueberries. Perfect for breakfast with yogurt, as a muffin topping or eaten directly out of hand for a quick and healthy snack!
  • 1½ cups old fashioned oats
  • ½ cup kasha (toasted buckwheat)
  • 3 tbsp. brown sugar
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • ¼ cup coconut oil
  • ¼ cup wild blueberry buckwheat honey (or any buckwheat honey)
  • ¼ cup raw sunflowers
  • ¼ cup pepitas
  • ¼ cup coconut flakes
  • ¾ cup dried blueberries
  1. Preheat oven to 300 degrees and line a sheet pan with parchment paper.
  2. In a large bowl mix together the oats, kasha, sugar, salt and cinnamon; set aside.
  3. Melt the coconut oil in the microwave for 1 minute or until it is fully melted. Mix in the honey.
  4. Pour the honey mixture over the oat mixture and mix well.
  5. Spread the oat mixture on the cookie sheet. Bake for 20 minutes.
  6. Use a spatula to mix in the sunflower seeds, pepitas, coconut and dried blueberries (while still on the pan).
  7. Bake for another 15 minutes, or until oats are golden. The granola will harden once removed from the oven and at room temperature.
  8. Store the granola in a sealed container in a cool dark place.
