Paprika Chicken

  • 4 chicken breasts
  • 2 cups whipping cream
  • 3 tbsp butter, melted
  • ¼ cup all-purpose flour
  • ¼ cup parsley (1 tsp dried)
  • 1¼ tsp salt
  • ¼ tsp black pepper
  • 2 cloves garlic, minced
  • ½ cup mushroom pieces
  • 2 tbsp Paprika
  • 2 tbsp all-purpose flour
  1. Preheat oven to 400 degrees F.
  2. In a medium mixing bowl, whisk 2 tbsp melted butter, 1 tsp salt and 2 tbsp(about out of the ¼ cup flour) until smooth, add one cup whipping cream to the mixture, whisking as you add to avoid lumps. add the remaining whipping cream and flour and whisk by hand about 3 minutes.
  3. Coat a baking dish with the remaining 1 tbsp of melted butter, place your chicken breasts in the dish and coat with remaining ¼ tsp salt, pepper, onion, mushrooms, garlic and remaining 2 tbsp flour.
  4. Pour cream mixture over the chicken breasts and sprinkle paprika and parsley evenly over the top.
  5. Cook for 45-50 minutes at 400 degrees F, slightly longer if the top hasn't browned and the sauce isn't thickened enough.
  6. Serve chicken over pasta or rice with sauce spooned over the top. Add fresh parsley for garnish, if you like and serve.
