Banana Nut Loaf

Serves: 6-8
  • ½ cup sugar
  • 3 tsp baking powder
  • ½ tsp baking soda
  • 2 cups flour
  • ½ tsp salt
  • ½ tsp nutmeg
  • ½ cup finely chopped nuts
  • 1 egg
  • ¾ cup milk
  • ¼ cup vegetable oil
  • 1½ cups mashed ripe bananas (approx 3)
  1. Beat together egg, milk, vegetable oil and mashed bananas.
  2. Stir in the first 6 ingredients and mix well.
  3. Pour into a greased 9X5X3 inch loaf pan.
  4. Bake at 350 degrees F for 65 to 70 mins or until a toothpick inserted into the centre comes out clean.
You can substitute nuts for chocolate chips. If you are looking for a healthier version, try using ¼ cup applesauce and ¼ cup crown sugar instead of the white sugar. If you do this, you will also need to cut back the milk from ¾ cup to ½ cup to adjust for the extra moisture of the applesauce. You can also cut out the salt.
