Mix eggs and milk in a large mixing bowl with a whisk or electric beater. Add the pinch of salt and mix thoroughly. Let stand for 10 minutes.
Gradually add the equal parts of flour into the milk and egg mixture and beat until free of lumps, similar to thick cream.
Let the batter to rest in the kitchen for at least 30 minutes,up to a couple hours (if possible).
Put a dime sized piece of bacon fat, lard, roast drippings or ½ tsp vegetable oil into each muffin tin and heat in the oven until the fat is smoking. Whisk the batter again, adding 2 tbsp of cold water before filling each tin to ⅓ with batter.
Cook until golden brown for approx 20 minutes.
