Microwave Peanut Brittle

  • ½ cup water
  • 2 tbsp butter
  • 1½ cups granulated sugar
  • 1½ cups dry roast peanuts
  • 2 tbsp corn syrup
  • 1 tsp baking soda
  1. In a large bowl microwave water and butter on high power for 1½ - 2 minutes or until active boiling.
  2. Add sugar, peanuts and corn syrup, mix well and place back into the microwave on high power for 13-15 minutes or until a deep caramel colour, careful not to burn the sugar.
  3. Remove from the microwave and stir in the baking soda until it foams.
  4. Spread onto a greased cookie sheet quickly; it sets quickly.
  5. Cool and break into pieces.
Each microwave is different and may require more or less cooking time, depending how hot it is. A good rule of thumb is that the peanut brittle mixture should be cooked long enough when it is a deep caramel colour but not too long that the sugar starts to burn, you can smell the burning. If you have to microwave longer, do so before adding the baking soda. If the peanut brittle has not been cooked long enough it will not harden. Once you make this recipe a few times you will know exactly how many minutes it takes for the perfect set in your microwave, write it down so you can cook it that long every time.
