Sunshine Egg Cups

- 12 slices of bread
- 12 eggs
- 1 avocado, diced
- 1 clove of garlic, chopped
- ½ cup cheddar cheese, grated
- salt
- pepper
- Preheat oven to 350 F.
- Spray a muffin tin with cooking spray and press one slice of bread into each muffin cup, shaping the cup.
- Sprinkle a little garlic into each cup.
- Crack 1 egg into each cup, placing pieces of avocado around the yolk.
- Sprinkle the top of each cup with a little salt, a little pepper and a little cheddar cheese.
- Bake at 350 F. for 25 minutes.
- Remove from each cup using a spoon. Serve warm or store in the refrigerator or freezer for later.
