Quinoa Bacon Stuffed Jalapeño Poppers

Ingredients
  • ½ cup cream cheese
  • ½ cup shredded Cheddar cheese
  • 1 cup cooked Quinoa
  • ½ cup real bacon bits (about 4 cooked strips, crumbled)
  • ½ tsp garlic powder
  • ½ tsp hot sauce (optional)
  • ¼ tsp lime juice
  • ¼ cup crushed nacho chips
  • 12 jalapeno peppers, half lengthwise, seeds/spine removed
Instructions
  1. Put sliced Jalapeno's on ice until ready to stuff then pat dry completely.
  2. Whip the cream cheese until smooth.
  3. Add in remaining ingredients and mix well.
  4. Stuff each jalapeno half with a generous amount of cream cheese filling.
  5. Sprinkle with crushed nacho chips and bake at 400 degrees F. for 15 minutes in a baking dish.
  6. Serve warm.
