Honey-Lavender Blackberry and Feta Grilled Cheese Sandwiches

  • 2 cups fresh blackberries
  • 1 tbsp water
  • juice of ½ lime
  • 1 tbsp honey
  • 1 tbsp cornstarch
  • 2 drops Lavender Essential Oils (certified therapeutic grade)
  • 8 slices of bread
  • butter
  • Feta
  • ½ cups chocolate chips
  1. Combine blackberries, water, lime juice, honey, cornstarch and lavender in a small pot and bring to a boil over high heat. Once reaching a rolling boil, reduce and let simmer for 5 minutes or until thickened, stirring occasionally. Remove from the heat.
  2. On each slice of bread spread butter onto one side (the outside of the sandwich). Set aside chocolate chips and feta for assembly.
  3. Heat a large frying pan over medium heat. Place as many sandwich halves will fit flatly on the frying pan. Spread a layer of Blackberry sauce on each slice of bread, sprinkle a layer of Feta and a layer of chocolate chips. Top with top slice of bread and continue frying, flipping half way, until both sides of the sandwiches are toasted a golden brown.
  4. Leftover Blackberry sauce can be stored in the refrigerator approximately 1 week.
